For Parfum d’Acadie, we select grapes from the plot with the best ripeness. About half of the blend is fermented and aged in French oak barrels of varying ages, while the rest is vinified in stainless steel tanks. The delicate oak notes complement the floral aromas typical of Acadie Blanc rather than masking them. Barrel aging also adds body and a lovely persistance.
